This recipe comes from a famous but no-longer open hunting lodge in Alabama owned by the Pittman family and may be the easiest I’ve ever cooked. It’s also one of the easiest to remember. If you don’t have fresh marjoram, improvise with fresh basil, sage, oregano or tarragon. According to clan patriarch, Robert Pittman, the important thing is to simply use fresh herbs and real butter.
PS: Robert’s son, Bo, is the author of my favorite rule of hunting, but you must read it with a strong Alabama accent: Bo said, ‘Don’t go stompin’ around in the woods or you will booger it up.” Same goes for using dried herbs or margarine in this dish.
Robert P’s Quick Sautéed Turkey Breast
serves 2
Ingredients
1 pound boned turkey breast, in bite sized pieces
1/2 teaspoon salt
1/4 teaspoon white pepper
2 tablespoons butter
1 tablespoon fresh marjoram
1 tablespoon chopped fresh chives
1 tablespoon chopped fresh parsley
Cooking
1. Dry the turkey bites with paper toweling, and season with the salt and pepper.
2. Melt the butter gently in the pan, over medium heat, until it starts to sizzle. Add the turkey chunks, marjoram, chives and parsley and sauté the meat, stirring as it cooks to make sure all sides of the chunks are covered with the herbs and butter and cooked to about 165F, about 4 to 5 minutes at most.
3. Arrange on a platter over rice or egg noodles, and serve with fresh asparagus.
